Here's two of the Low Calorie Recipes from Easy Chef's "Low Calorie Recipes". Enjoy!

LOW FAT CHEESY POTATO CASSEROLE

2 tbsp. margarine
1 (10 3/4 oz.) low fat cream of chicken soup
1 (6 oz.) low fat sour cream
1 1/2 c. shredded low fat Cheddar cheese
1 (32 oz.) pkg. frozen hash brown potatoes
3/4 c. corn flake crumbs
Vegetable oil spray

Heat margarine, sour cream, soup and cheese until cheese melts. Spray a 9"x13" inch dish with oil . Put potatoes in dish. Pour cheese mixture over potatoes. Sprinkle with corn flake crumbs. Spray lightly with oil spray. Bake at 350 degrees for 1 hour. Serves 10-12.


FRESH STRAWBERRY PIE

8 graham crackers, crushed into crumbs
1/2 c. melted reduced calorie margarine

Mix and pat into bottom of 9 inch pie plate. Bake at 350 degrees for 10 to 15 minutes and cool.

TOPPING
1 pkg. diet strawberry gelatin
4 c. fresh strawberries
2 1/2 c. water
3 tbsp. cornstarch
10 pkg. artificial sweetener
1 c. lite whipped topping

Put strawberries in pie plate and sprinkle on 2 packages of sweetener. Set aside. Add gelatin to 2 1/2 cups of water and cornstarch. Bring to a boil and cook until thick. Remove from heat and add 8 packages of sweetener. Stir. Pour over strawberries. Chill in refrigerator. Before serving, spread whipped topping on top.
